BBQ Recipes – Grilled Chicken
When planning a grill out to enjoy with friends and family, grilled chicken is surely one of the first things to spring to mind.
Although it may seem very simple to cook, it is actually very easy to mess things up when cooking grilled chicken. Chicken should be cooked in lower temperatures and for a longer duration than other meats. Meticulous cooking skills, and patience, are necessary in order to avoid over-charring or under-cooking your grilled chicken.
Barbecued or grilled chicken?
Firstly it is important to define the difference between the barbecuing and grilling process. Remember that BBQing is a slow process carried out at low temperatures. On the other hand, grilling is carried out at high temperatures and is a fast process. Chicken breast can be grilled but chicken legs, wings or thighs are way better when barbecued. When slow cooking your barbecue chicken the key is patience!
Tip: Try to moderate the heat of your charcoal or gas BBQ. If you have a charcoal bbq set the coals all on one side and use the other side as a cool spot where you can grill your meat. If you have a gas bbq or gas grill just turn the heat down to low.
BBQ Recipes – Grilled Beef
Beef is the jewel on the crown for many barbecue lovers. Whether you love the South American ribeye or prefer juicy bbq beef ribs, eating grilled beef is normally a mouth-watering experience for everyone! Since there are too many beef bbq recipes to choose from, we have opted to share Martha Stewart’s amazing method of grilling beef tenderloin.
Barbecued Beef Tenderloin Recipe
Tip: Similarly to what we have suggested with grilling chicken, direct and indirect heat zones should be set.
- Rub beef tenderloin with oil.
- Season with salt and pepper.
- Sear all sides about 5 minutes per side over direct heat until caramelised.
- Using the indirect heat zone, grill the beef tenderloin for 20 to 30 minutes depending on thickness of the tenderloin.
- Remove the tenderloin from grill and brush with mint-chive butter.
- Let the tenderloin stand for 15 minutes before serving and enjoy!

Barbecue Pork Spare Ribs Recipe
Pork spare ribs are a BBQ classic and therefore we couldn’t write this article without this finger-lickin’ BBQ pork spare ribs recipe.
Ingredients: 1/2 cup tomato sauce + 1/4 cup Worcestershire sauce + 1/4 cup brown sugar, firmly packed + 2 tablespoons apple cider vinegar + 1 tablespoon Dijon mustard + 3 teaspoons smoked paprika + 1 teaspoon dried oregano leaves + 1 teaspoon ground cumin.
Method:
- Prepare the glaze by stirring worcestershire sauce, tomato saurce, packed brown sugar, dijon mustard, smoked paprika, apple cider vinegar, ground cumin and dried oregano leaves in a saucepan over low heat for around 3 minutes. Simmer until thickened.
- Add 500 ml of hot water with 2 tablespoons of the glaze in a roasting pan. Add the ribs and cover with foil. Bake at 180ºC and turn after 1 hour. Cook for another hour. Brush the ribs with the remaining glaze.
- Preheat a bbq grill on medium. Cook the ribs for 4 to 5 minutes each side and transfer to a chopping board.
- Cover the ribs with foil and set aside for 2 to 3 minutes to rest before carving. Cut with a sharp knife and enjoy it!
Tip: If the glaze becomes too thick, put it in the microwave for some seconds. Try to prevent the glaze from boiling or it may catch on to the base of the pan.
